OUR KITCHEN MANIFESTO

NATURE IS OUR MUSE

We borrow from it and imitate it in all its abundance — its flavours and colours alike. The kitchen works with organic produce whenever possible, preferably sourced locally or from our own garden. Great taste, animal welfare, and thoughtfully balanced portions.

Our own permaculture kitchen garden, enriched with eelgrass, will later this year provide potatoes, tomatoes, peas, asparagus, and more. Eggs and other fine ingredients come from Lammehave Økologi, where hens, lambs, pigs, and fields all thrive — for the benefit of us all.

Our wine supplier is based in Hesnæs itself. It could hardly be more local — and he also happens to be one of the very best. L'Esprit du Vin by Jørgen Christian Krüff is deeply passionate about wine and has played an important role in introducing biodynamic wines in Denmark. We asked him to curate the villa’s wine list. He has done so with great confidence — and has even hidden away a few special bottles in the cellar for those extra memorable celebrations of the good life.

We serve all meals of the day, and our chefs cook exclusively for the guests of Villa Hesnæs. We serve breakfasts that satisfy. Snacks for smaller cravings. And always something for those with a sweet tooth.

For lunch, we offer lighter meals suited to your day — whether spent indoors, outdoors, by the beach, or packed for an excursion or hike. Speak with the chef before your outing, and we will gladly prepare a packed lunch for you.

Dinner takes inspiration from the French kitchen and from the kinds of dishes we ourselves long to eat while on holiday. If you have settled comfortably into the sofa by the fireplace, we are happy to serve dinner right there. Expect notes and flavours from French cuisine combined with the culinary traditions of Falster and the chefs' own favourite dishes.

Service is available from 7:30 am to 8:30 pm.
